Lychee Vodka Iceblocks

Here’s how to have your cocktail and drink it too – no shaker required. These boozy iceblocks were inspired by the flavours in our very own Kit Martini, the signature drink at Kit & Kaboodle in Kings Cross. The combination of lychees, vodka, apple and elderflower just screams summer, and better yet, they are super easy to make. So why not whip up a batch on Australia Day? They’re sure to impress all your mates!
Lychee, Vodka and Elderflower Boozy Iceblocks

Makes about 10 depending on the size of your glasses.
Notes: Start this recipe a day in advance to allow time for iceblocks to freeze. These were made in tall shot glasses, but you can use any other small glass. You will also need some paddle pop sticks, which you can usually find in the craft section of your local $2 shop.
What you’ll need
• 8 lychees, peeled and seeds removed (or use canned lychees if fresh are unavailable)
• ¼ cup vanilla vodka
• 3-4 tablespoons elderflower liqueur or cordial
• 500ml cloudy apple juice
• Sugar syrup, to taste, optional
What do to
Process lychees in a food processor and pass through a fine sieve to get about 200ml of juice. Stir in vanilla vodka, elderflower liqueur or cordial and apple juice. If you like it a little sweeter, add sugar syrup to taste.
Pour into shot glasses (or whatever glass you’re using) and freeze for about 2 hours. Insert a paddle pop stick into the center of each iceblock and then freeze overnight. To serve, gently twist iceblocks from glasses or run under a little cool water to dislodge. Serve immediately.
