Sous Chef: The Winery
The Winery has become a Sydney institution overnight with its reputation of great service, amazing decor & European feel. We seek a talented Sous Chef to join this busy venue.
Our Wine Bars (Gazebo Elizabeth Bay, The Winery & Manly Wine) offer their own original brand of personalised service, an extensive wine menu & a fantastic food offering.
The Winery located in Surry Hills is the big sister of our wine bars and is probably the most successful. Due to an internal promotion within the group, this extremely busy venue seeks an experienced Sous Chef to lead the team.
Who we are looking for?
You will be an inspired leader with at least 2 years experience as a Sous Chef within a high volume, busy venue. You will be passionate about food & service, enjoy training and developing the team and love to play!
Responsibilities
- Oversee all kitchen operations and ensure the smooth running of the kitchen shift
- Ensure service standards and procedures are consistent & communicated
- Assist the Head Chef to mentor, lead and inspire the kitchen brigade
- Staff supervision and training
- Maintain food & labour costs & ensure they are in line with budgetary requirements
- Ensure kitchen compliance is met regarding food safety, work health & safety and company policy
- Insist on “blow away” food service & ensure consistency within the team
- Stock management
